A honey walnut cake is one of the easiest cakes you can make, if you have friends spontaiously coming over, I strongly reccomend this cake next to a hot cup of coffee or tea. It’s so quick that from start to finish it can take less than 40 minutes.
The smell of carmelized honey spreads around our house quite often, this is my go-to cake for any occasion, specially if i’m feeling lazy but still want to score some compliments. The ingredients are always around and it’s all in one bowl, so less dishwashing, yay! (Well, to be honest, my boyfriend does the dishes, so yay for him! ;))
One bowl, 5 minutes
You’ll need some flour, oil, eggs, sugar, honey ofcourse, baking powder, baking soda, cinnamon and the secret ingredient – a dark cup of tea. If you like, you can also add some walnuts, I love the nutty crunchiness it gives this cake.
The tea gives the cake the golden dark colour and adds a lovely aroma to the final cake. Just mix up all the ingredients together in one bowl
Pour it into your pre-greased and floured baking pan
and into the oven. That’s it! Bonus tip: cake tastes even better after 24 hours. Just place it in the fridge and take it out an hour before eating, the flavors of tea and honey are absorbed fully.
- 1 strong cup of dark tea (cooled) (240ml)
- ¾ Cups oil (180ml)
- 1 Cup Honey (240ml)
- 3 Eggs
- 1 Tsp vanilla extract
- 2¼ cups all-purpose flour (288grams)
- ¾ Cup sugar (96grams)
- 1½ Tsp baking powder
- 1½ Tsp baking soda
- 1 Tsp Cinnamon
- 1½ Cups walnuts (optional) (220grams)
- Preheat oven to 160 degrees and prepare two English cake pans by greasing and dusting with flour
- Mix all the wet ingredients: tea, oil, honey, eggs, vanilla extract
- Add dry ingredients: flour, sugar, baking powder, baking soda, cinnamon and mix until there are no lumps. If using walnuts, add 1 cup at this stage and mix in.
- Divide batter between the pans and place in the oven for about 30 minutes. Cakes are ready when a toothpick inserted comes out almost clean, a few crumbles are good to indicate the cake is moist inside
- Cool on a cooling rack and release from the pan. Serve at room temperature. (Cake is even better the following day, seal well.
