Oh my, I’m so excited to share this recipe because this Asian slaw salad with peanuts is just the easiest and most delicious crunch you’re going to come across! The colorful combination is just spot on, but the best part is the ginger sesame dressing which balances flavors perfectly and wraps this colorful party around to make an amazing side salad.
What does it go with?
Almost anything! I love to accompany this salad with some fish, like marinaded roasted salmon. Or some stir fried, maybe breaded chicken. And honestly, this makes an amazing lunch to take as is to work too!
You can easily make it ahead and bring it to a potluck, picnic, barbecue or any event where you want everyone impressed and asking for your recipe 😉
How to make it
Cut up all the crunchy veggies you love, I used red cabbage, green cabbage, carrots, radishes, red bell peppers, yellow bell peppers. Make sure you julienne or cut them thinly for the best texture (or just buy them shredded up like I do on lazy days (i.e. most days)).
To that, add some chopped fresh cilantro, green onions and lots of peanuts! You can also add or omit anything you like. I love adding edamame, thinly sliced red onions, radishes, broccoli slaw, kohlrabi, etc.
Then just mix up the amazing dressing with some fresh minced ginger and garlic, date honey, peanut butter, sesame oil, chili sauce, rice vinegar and a dash of soy. Mix it all together with the cut vegetables so everything is perfectly coated! Sprinkle some chopped peanuts on it and you’re good to go.
- ½ Shredded White cabbage
- ½ Shredded Purple cabbage
- 1 Red Bell Pepper, thinly sliced
- 1 Yellow Bell Pepper, thinly sliced
- 4 Julienned Carrots
- 4 Jullienned Radishes
- 2 Stalks of Green Onion, sliced thinly
- ½ cup Chopped Roasted/Fried Salted Peanuts (or Cashews)
- 30 grams Fresh (1 oz) Cilantro, chopped
- 100 grams (3.5oz) Edamame
- 2.5 Tbsp Rice Vinegar
- 2.5 Tbsp Date Honey (or sub with normal honey)
- 1 Tbsp Creamy Peanut Butter
- 2 Tbsp Vegetable Oil
- 1 Tbsp Sesame Oil
- 1 Tbsp Sweet Chili Sauce
- 1 Tbsp Soy Sauce
- 1 Tsp Minced Garlic
- 1 Tbsp Minced Fresh Ginger
- ½ Tsp Salt
- In a large salad bowl combine all or some of the ingredients for the slaw salad. You can chose which ingredients you like and add others as well like thinly sliced red onions, radishes, broccoli slaw, kohlrabi and more.
- Combine all the dressing ingredients into a small bowl and whisk together until completely combined.
- You can keep the dressing and slaw ingredients separately and toss to combine about 5-10 minutes before serving, this way everything stays fresh and the flavors have time to absorb.
