If you’re a winter person like I am, then a bowl of soup must be one of your basic comfort foods. The Netherlands is the perfect country to pamper your soup addiction, sitting next to a big window watching the rain fall and warming your hands around a bowl of warm, rich soup – now that’s a recipe for a dreamy day in my book.
This hearty bean soup was a regular at our house, my dad used to make a -very- big pot and no matter how much he made, leftovers would normally not survive until the following day.
This bean soup is one of my favorites because it’s so easy and quick to make, but still makes a full healthy, high-fiber and high-protein meal.
You only need very basic ingredients, which in most cases you already have at home. Best part? It takes less than 15 minutes to make and another 30 minutes or so to cook! Perfect for a lazy dinner.
If you’re not Vegan / Vegetarian, I do reccomend to add some smoked sausage in there too.
I always make this Easy No-Knead Bread with it, just dip that crunchy piece of bread in there, yummm!
How to make it
Start up by frying some onions, mushrooms and garlic (if making the non vegan version, fry the sausage cubes at this stage)
Mix in tomato paste and cumin and fry a few minutes more so the flavors are fully released
Add some water and canned white beans in tomato sauce and bring to a boil
Cut some potatoes into small cubes and add to the pot. Cook on medium heat until the potatoes are soft and ready to eat, about 30 minutes.
That it, really! The soup will have a rich full consistency and makes a delicious meal
- 3Tbsp Vegetable oil
- 2 Medium onions, cubed
- 5 Garlic cloves, chopped
- 1 Box Champignon mushroom (400 grams), sliced
- 1 Smoked Sausage, cut in bite sized cubes (Optional)
- 1 Small tomato paste (140 grams)
- 2.5 Tbsp Cumin
- 3 Cans white beans in tomato sauce (1080 grams)
- 5½ cups water (1400ml)
- 2 Tbsp Mushroom bouillon powder/cube (Optional)
- 1 Tbsp Chicken bouillon powder/cube (Optional)
- Salt & Pepper
- 7 Medium red potatoes, cut into bite-sized cubes
- In a large sauce pan on medium high heat, saute onions until soft. Add garlic and cook for a few minutes longer
- Add mushrooms and saute until liquids are cooked out (5 minutes)
- If using sausage, add cubes at this step and saute for 5 more minutes
- Add tomato paste, cumin and saute for 1 minute, stirring to allowing the flavors to release
- Add the white beans, water and bouillon powder, stir well and bring to a boil
- Add potato cubes, salt and pepper and bring heat down to medium. Simmer until potatoes are soft and fully cooked, about 30 minutes.
