If you’ve never tried a Borek or Burekas (in Hebrew) this is your time to discover one of the best foods the middle east has to offer. A Cheese Burekas pastry is a baked pastry made of a thin flaky buttery dough (puff pastry) filled with a cheese mix. You can make the dough yourself, but really, the store bought is so good and keeps so easily in your freezer.
You can make these pastries in just a few minutes and bake them right before your guests arrive for a fresh, flaky and cheesy snack. Bonus: the entire house will smell so good!
Make it in a few minutes
There are many fillings for Burekas, mushrooms, pizzas style, potato, spinach, meat – I mean, what can possibly go wrong with your favorite food stuffed into flaky puff pastry, right?
This week I was making Cheese Burekas for my homeowners association meeting, I needed something good that can be eaten without needing cutlery. For the filling, I mixed up some of my favorite cheeses together: Ricotta, Cottage, Feta, Manchego and Guyere. Mixed that all with an egg and a dash of salt.
You can be as creative as you like and mix in any cheese you like actually. Then just take one square of puff pastry and fill in about a tablespoon of the cheese mixture
Tighten the edges a bit with your fingers, making sure the filling doesn’t escape from the sides, and press to close with a fork
Make sure it’s completely sealed all around
Brush with a whisked egg and sprinkle with sesame
Repeat with the rest and place them on a baking sheet lined with parchment paper
Place them in the oven for a 20 minutes until nice and golden
Let cool 5 minutes before serving, best served warm
- 2 Package of Puff pastry, cut into 20 squares
- 150 grams Ricotta Cheese (5.2 Ounce)
- 200 grams Cottage Cheese (7 Ounce)
- 100 grams Feta Cheese, crumbled (3.5 Ounce)
- 170 grams Manchego Cheese, grated (6 Ounce)
- 170 grams Guyere cheese, grated (6 Ounce)
- 2 Eggs
- ½ Tsp Salt
- 2 Tbsp Sesame Seeds
- Preheat oven to 190 °C (375 ℉) and line a baking sheet with parchment paper
- Mix in the cheeses, one of the eggs and salt
- Fill in the puff pastry with a tablespoon of the cheese mix and tighten the edges together with your fingers. Then secure the seal with a fork.
- Repeat with all and place each on the lined baking sheet.
- In a small bowl, whisk the additional egg and brush each Burek lightly on top. Sprinkle with sesame seeds.
- Place in the oven for 20 minutes or until golden brown on top and nicely puffed.
- Eat while still warm
