The battle for the crispy potato
Dinner time, the house smells amazing and you’re already so hungry. A beautiful pan of roasted chicken or vegetables with potatoes comes out of the oven and on to the table. And then, you spot it. That one perfect potato that has a really crispy bottom, slightly sticks to the pan and is scraped off with all that crispy goodness that cooked in all those delicious juicy flavors. You want it! But you’re not the only one.
Well guess what? No more fighting! This crispy oven roasted potatoes recipe makes sure all potatoes are perfectly crisp! Everyone wins and gets that perfect crunch with every bite.
What’s the secret?
The trick is to cut the potatoes in half and place them in a well greased pan with the cut side down.
This makes a delicious and easy side dish for any meal, it’s vegan/vegetarian so you’re safe with all guests, and well, who doesn’t love crispy potatoes?
How to make it
Start off with potatoes (I prefer the red ones), wash and dry them well.
Cut potatoes into halves, length wise so more potato surface can get crispy
Peel one head of garlic and a few onions cuts in half. Toss them all in a bowl with some olive oil and fresh thyme.
Add some olive oil to a baking dish and make sure the entire bottom surface is covered. Arrange the potatoes, cut side down in the a baking dish and add the onions, garlic and thyme on top.
Place in a pre-heated oven on 220°C (430°F) for about 30 minutes until perfectly crisp
Remove thyme sprigs and sprinkle coarse salt and pepper on top
- 10 Medium potatoes (or to fit your dish)
- 3 Medium onions, peeled and cut in half
- 1 garlic head, peeled
- 10 grams fresh thyme (about 8 springs)
- ¼ cup olive oil
- salt & pepper to taste
- Preheat oven to 220°C (430°F)
- Prepare a baking dish and add half the olive oil, use a brush to make sure it's smeared all over the bottom.
- Cut potatoes in half and add to a bowl, add onions, garlic, thyme and remaining half of olive oil. Toss everything to cover completely.
- Arrange the potatoes, cut side down, on the baking dish and add onions, garlic and thyme on top.
- Place in the over for about 30 minutes, until the potatoes are cooked through and perfectly crispy on the bottom. Serve warm.
